Fluffy High-Protein Egg Bites

The perfect make-ahead high protein breakfast that’s actually satisfying, tasty, and comes out perfectly fluffy every time.

 
 

Stop buying egg bites from Starbucks and make these!!! There’s something so comforting about having a nourishing, high-protein breakfast ready to go—especially on busy mornings when you don’t want to think, just eat.

I’ve tested a lot of egg bite variations, and the biggest issue I kept running into was texture. Most recipes turn out either too dense, rubbery, or frustratingly watery after reheating. These are different! These egg bites are:

  1. Light and fluffy (not spongy)

  2. Creamy and structured (not wet)

  3. High in protein and actually filling

  4. Simple enough to make once and enjoy all week

This has become one of my go-to weekly staples—something I can make once and come back to again and again when I need something quick, grounding, and nourishing.

The below recipe is made with ground chicken, bell pepper, and onion, but you can use whatever you have on hand!

How to Store & Reheat:

  1. Store in an airtight container in the fridge for up to 5 days

  2. Reheat in the microwave for 45-60 seconds (uncovered)

  3. Let sit for 1 minute before eating for best texture


 
 

🥚 Fluffy High-Protein Egg Bites

Ingredients

  1. 8 large eggs

  2. 1/3 cup full-fat cottage cheese

  3. 1/3 cup whole milk

  4. 2 teaspoons cornstarch

  5. 1/8 teaspoon baking soda

  6. 3/4 teaspoon sea salt

  7. 1/4 teaspoon black pepper

Add-ins:

  1. 1/2 lb ground chicken, cooked

  2. 1/2 bell pepper, diced

  3. 1/2 onion, diced

  4. garlic powder

  5. onion powder

  6. salt

  7. pepper

🔥 Step-by-Step Instructions

1. Preheat oven to 350°F.

2. Prepare your pan
Use a silicone muffin tray or generously grease your muffin tin with avocado oil or ghee.

3. Cook your add-ins
Sauté the onion and bell pepper until soft and most of the moisture has cooked off.
Cook the ground chicken fully, season with salt, pepper, garlic powder, onion powder, and set aside to cool.

4. Blend the egg base
In a blender, combine:

  1. Eggs

  2. Cottage cheese

  3. Milk

  4. Cornstarch

  5. Baking soda

  6. Salt and pepper

  7. Blend until completely smooth and slightly frothy.

5. Fill muffin cups
Pour mixture about ¾ full into each cup.

6. Combine
Spoon chicken and veggie mixture evenly into each cup.

7. Bake
Bake for 25–30 minutes, until just set in the center.

8. Cool slightly
Let sit for 5–10 minutes before removing.
